The way into a man’s heart is said to be via his stomach but on our cookery course at la Maison Arabe we found that one way into the heart of another culture is via its cuisine.
Our Morrocan cuisine course was hosted by the delightful and super-positive Wafa.
After arriving at La Madison Arabe Hotel, we were transported to The hotel’s beautiful Country Club in L’Palmarie district at the edge of Marrakech. The course took place in a nicely appointed, purpose made and modern facility with a lovely garden.
Wafa first gave us some kind words of welcome before giving us a short insight into the cultural significance of cuisine in Morrocan society and a history of the fascinating peoples that have mixed together over time here to create the wonderful and vibrant society that is modern Morocco.
With a friendly team lead by chef Houda we were first invited to learn about the significant art of tea making, with its complex technique, exotic fresh ingredients and traditional ceremony.
After this we were taking our not the ‘classroom’ which was more like the set of one of the cookery shows on TV but with a sumptuous, Moroccan vibe,
Here with the aid of Wafa and chef Houda, we were guided through demonstrations on various fascinating topics, culminating in our own chance to prepare a full and authentic (and even in my own case) delicious tasting chicken Tagine.
All of the lucky participants had a hugely enjoyable time and came away from the course with a real insight into Moroccan cuisine and with the basic skills to add a little Arabic flavour into our own lives.
