Voted “World’s Best Residential Moroccan Cooking Programme” in 2011, we are delighted to continue to teach our guests the secrets of this magical culture and its food. We were also chosen as Masterchef's exclusive Moroccan travel partner in 2014. Because all of our classes are private classes, they move at the ideal pace for the student, and allow for limitless questioning and personal attention.

Each cooking class includes a brief introduction to Moroccan cuisine, an overview of the techniques, ingredients, spices, and equipment appropriate for what is going to be prepared.

Participants are able to determine what it is they would like to learn (ie which dishes) within the constraints of the seasons and what is fresh and available in the market. A good starting point is the dishes that are on our daily-changing menus. The Dar Les Cigognes cookbook also provides many ideas.

The participant will learn about spicing, the Moroccan flavour lexicon, the basic techniques underpinning any dish (eg. making couscous from scratch before assembling the final dish) so that they will not only be able to reproduce what they learned at home, but also be able to innovate on their own. We offer classes to suit all levels, from the novice to the advanced professional, and are delighted to design a bespoke class to suit your needs.
