This course is given by an Otomí artisan, Viki, in her hometown, the small indigenous community of Santiago Mexquititlán, located in Amealco, state of Querétaro. After arriving in the included transportation leaving from Querétaro City, this course begins with a walk from the center of the community to the house of the artisan, where one can see the incomparable rural scenery and breathe pure air. At the time of arrival, the host offers a small lunch, after which the the class begins.
The class is as traditional as it could be, cooking the same dishes that the Otomí –an ancient ethnic group centuries older than the Aztecs, with their own separate language– prepare on a daily basis. This class teaches millenary techniques, from transforming corn into nixtamal to make tortilla dough, to grinding spices in a traditional metate to make Mole or Adobo, cooked in traditional firewood stoves.
After having enjoyed the meal together with the locals and saying goodbye, the group walks back to the center of the community, where the transportation van awaits to safely return to Querétaro.
