After an initial introduction, the day continues with an aperitif infused with tradition: freshly baked focaccia or farinata, served with a glass of local wine, allowing you to immediately immerse yourself in the flavors of Liguria. During the aperitif, I will walk you through the lesson's program, introducing the dishes we’ll prepare and sharing their history and cultural significance.
The day begins with the preparation of a local, traditional dessert.
While the desert is setting, we will make the iconic Ligurian focaccia. From the dough-rising process to the golden, fragrant baking, guests will learn the secrets to creating the perfect focaccia to share.
No Ligurian experience is complete without Genovese pesto. Following tradition, we will prepare this aromatic sauce using a mortar and pestle to enhance the flavors of fresh basil, pine nuts, and Parmesan cheese.
Then will be the time for “Corzetti”, a traditional Ligurian pasta, to use a stamp to imprint typical decorative designs. Once ready, the corzetti will be paired with the freshly made pesto for an authentic flavor experience.
Next, we’ll focus on making fresh Tagliolini using the traditional chitarra pasta tool. This technique creates thin, versatile pasta perfect for pairing with butter and sage or a fresh tomato sauce.
After preparing all the dishes, it’s time to cook and enjoy them together. We’ll savor the freshly baked focaccia, corzetti with pesto, and tagliolini, all in a relaxed and friendly atmosphere.
The experience concludes with an unforgettable lunch, where we’ll enjoy all the dishes prepared during the class. It’s a moment of sharing, enhanced by the pleasure of tasting the fruits of your labor, surrounded by authentic Ligurian hospitality.
