Traditional Oaxacan Cooking Class

First and foremost, we will show you the ingredients that you can find in all Oaxacan homes. One of the advantages of our experience is that we have a private garden with herbs and organic chilis.

Then, Baldo my son will share his knowledge in mezcal. We have an extended variety of agaves and homemade creations that you need to try. An open bar of mezcal is waiting for you. Snacks? Of course, but you need to do it Oaxacan style which includes worms, chicatanas, and chapulines.

Our family makes the best Oaxacan cheese in the world and you will have to come and judge for yourself. Our house has an organic garden and all the food will be prepared in braceros with charcoal and clay pots.

Have you heard anything about the metate and how tortillas are made by hand? Here we will show you how to make tortillas, tetelas, and memelitas. One of my specialties is salsas made in a molcajete, we will roast the ingredients over charcoal and comal.

In every class, we make 4 to 6 salsas depending on seasonal ingredients. The mole is the emblem of our cuisine and we will make one of the 7 moles from scratch using a metate, you can’t leave our home without tasting our mole negro, chocolate de agua, café de olla, nieves, and a delicious cake. 

Everyone will participate in the different processes, cutting ingredients from the garden, making sauces, and of course eating.  I am very excited to show you the authentic traditional flavors of Oaxaca. Remember, when you visit a house in Oaxaca you have to come with an empty stomach.

Schema

• 1:30 pm: Pickup at the main door of Santo Domingo's church
• 2:00 pm: Arrive at our traditional farm school
• 2:05 pm: Introduction and agua fresca is served
• 2:10 pm: Mezcal tasting 
• 2:30 pm: Little appetizer is served before going to the kitchen
• 2:45 pm: Cooking session  (mole making, tetelas, tamales, tortillas, memelas, empananas, traditional chocolate making)
• 4:45 pm: Time to enjoy the dishes 
• 5:45 pm: Dessert Session and time to enjoy hot chocolate, coffee, and traditional tea
• 6:15 pm: End of the cooking class and ready to go back to Santo Domingo's church

The class is available in English and Spanish. We can offer classes for vegans and vegetarians, please let us know in advance. We take into consideration food allergies and food restrictions.
