My instructor was Jeff. I had one great experience with him before (the Taiwanese beef noodle class) and am a happy returning student. Jeff has multiple talents. In addition to his ability to teach, he also has the ability to bring people together. In this particular class, he first engaged everyone by asking everyone their background etc. I did not know anyone (the size of the class was six) in this class but by the end of the class, we were all laughing together, cheering each other up (as we practiced flipping the oyster omelet in the pan), and having fun.
What I really liked about this class is the hands-on experience, in addition to the fun we had. I am the type of person who needs to get my hands dirty in order to memorize the way a dish is cooked. I watched a lot of online videos teaching how to cook but nothing beats standing right in front of the food you make. You get to know the timing to add the next ingredient when you smell certain clues from the food you cook. You cannot get this type of clues by watching a video. Your body remembers -- and of course, Jeff tells you to watch out for these subtle clues that mother nature gives you.
