I found Xie’s class on Cookly, booked it late the day before in blind faith, and turned out to be the only student she had today. Private cooking class, I’ll take it. We cruised around a market away from town, learning about the cornucopia of spices, noodles, tofus, and rice they have here, then went back to her parents place to cook all day. It was a total delight, and the kind of experience I could have only hoped for halfway around the world. It’s satisfying to make and taste a cuisine that you’ve always shied away from for years. Xie was an awesome, peppy, knowledgeable teacher. Her mom owned a Thai restaurant for 32 years that Xie helped cook in, so she’s got a wealth of excellent knowledge. Was also nice to get a local perspective on the city, it’s always so hard to jump in and know what to do/where to go in a way that’s true to a place. Hopefully some of you guys can take Xie’s class if you’re ever in Chiang Mai, and then cook local Thai food back home!
