このクラスについて

In this Oaxacan Vegan Cooking Class, we will take a tour through the beautiful colonial neighborhood of La Merced in Oaxaca, where we will walk through the colonial neighborhood and learn the secrets of this area of the city while shopping for ingredients with the traditional Chiquigüite and Mandil.

Halfway through our tour, we will meet producers of fresh organic vegetables from a town near the city, which are organically grown and harvested in the morning. After visiting more producers in the neighborhood market, we will try some traditional snacks and buy some supplies for our class of Oaxacan vegan cuisine.

We will return to our starting point to start the class and provide all the information on our menu, prepare everything fresh from scratch: a main course, a salad, water and dessert, all cooked in a traditional stove.

After cooking, it will be time to share our delicious food and thank Mother Earth for all the diverse tastes that Oaxaca has to offer.

"Awesome class/great chef"

We had a truly wonderful experience shopping, prepping, cooking and of course eating. A very nice group of people. A good size class. Great for English speakers. A highlight of my visit to Oaxaca

"Fun, informative and delicious"

We loved the cooking class. Learning about the different ingredients at the market, techniques for making salsa, tortillas and mole. All the food was super flavorful, and such fun to sit together and enjoy the food. Would definitely recommend the class!

Lise was great. Very informative and pleasant. Her gentle coaching made the afternoon/evening class enjoyable and resulted in a delicious meal that we shared with new friends.

"Wonderful Memories made in Oaxaca"

This was one of the activities I was most looking forward in Oaxaca and it did not disappoint. The shopping at the market was a great way to start the workshop and I was introduced to a few new ingredients. It was so fun to be a part of of the group cooking and we made an incredible meal. A few things to note, it is a relaxed environment so everyone gets random tasks to help prepare the meal and you get to rotate to different stations in the kitchen. Also the people in my group were from a variety of sources and some signed up for a vegetarian cooking class, no worries they can make everything vegan!

My partner and I took the class and loved it. We really enjoyed getting to explore the market to buy food before starting cooking, and that everyone’s preferences and restrictions were taken into consideration for the class. Chef Martin was a great instructor, and super knowledgeable about the history of agriculture in Oaxaca and Mexico.
