"A memory of a lifetime"
From beginning to end, my private phyllo class with Chef Fouzia--with Hajiba and Hayat expertly translating--was outstanding. Rasheed skillfully took me on the fastest hourlong food tour where I saw the most amazing fruits and vegetables, seafood, spices and also "commercial" phyllo dough making. In her kitchen, Fouzia showed me how to make phyllo at home. She made it seem so simple, yet it will take years for me to master. Once we'd made our phyllo, we made two kinds of bisteeya: pigeon and seafood. Finally, we made almond, sugar, orange blossom water-filled m'hancha--a Moroccan coiled phyllo dessert that was delicious. From beginning to end, they all made me feel like a part of the family and the finale of eating lunch on the terrace was unforgettable. Shukran! Lesli
"Exquisite Experience"
This experience was breathtaking. Aside from the view, the place and the people, the cooking class took it to another level. We learned a lot of Moroccan techniques in just a day! Pierre was very knowledgeable and cool. He had a brief introduction of Moroccan cuisine, an overview of the techniques, ingredients, spices, and equipment appropriate for what is going to be prepared. It was a hands on experience and very detailed. The workstations were also full of kitchen tools which were readily provided. They also encourage us to recreate the dish at home which made it very exciting!

Pierre was a wonderful guide, entertaining and knowledgable. The food we prepared was delicious and we were able to enjoy it in a beautiful environment. This class was the best part of a fantastic week in Morocco.
