The cooking session will start with a nice glass of Falanghina or Aglianico wine and previously prepared appetizers. Before getting dirty with flour, you'll go to the organic garden and handpick the vegetables for your sauce. You'll learn how to recognize proper organic vegetables, how they are grown following the season and old techniques for their preparation. Here, you'll also find happy chickens that provide the eggs for the pasta.
Back in the kitchen, you'll start with the preparation of the sauces to make sure the timing aligns with the other part of the dish. Each sauce will supplement a different kind of pasta. The sauces are meat-based, but there are vegetarian alternatives based on local and seasonal vegetables. When the sauces are done, you'll start with the preparation of the ingredients for the fresh pasta. The traditional recipe is a family recipe and has been passed down for generations to be shared with you.
You'll make pasta in the most traditional way — with the best ingredients and loads of passion. When the pasta dough is done, you'll enjoy a nice break before you'll start shaping the pasta into different forms. Classic pasta, stuffed pasta, and mixed dough pastas will be on the list!
Together with the chef and all the participants, you'll enjoy your creations while sipping on a complimentary glass of Italian wine (or a few).
