2-Day Vegan Cooking Class At A Seaside Villa With Oil And Wine Tasting In Bolgheri

Kristof Steiner, the renown Tel Aviv vegan cook and book author comes to the Academia Culinarium Tuscany to show you that vegan cooking and italian cuisine do indeed make a perfect match. Join one of our two-day courses in a small intimate group of a maximum of 14 participants. Kristof´s wast vegan knowledge, the professionalism of the Culinarium team, the Italian food and wines combined with the sunny, sandy beach at our doorstep will guarantee you an unforgettable holiday.

On the first day we will visit world famous Bolgheri, where we will taste some really serious Supertuscan wines, and visit a (multiple) world champion olive oil producer for an oil tasting on the highest level. We leave early for Bolgheri, some 60 miles/100km down the coast, where our first stop will be the olive grove of two real champions! Simone and Paolo are among the best master olive oil producers in the world, and multiple world champions. You will learn a lot about olives, and how to make premium oil. We will learn how to taste, buy, use and store olive oil. We will then have a vegan lunch with a breathtaking view to the sea.

After lunch we visit Bolgheri itself, passing the world famous, 5km long, cypress tree lined avenue pictured on almost every postcard from Tuscany. In the afternoon we will have our wine tasting. As you might know, Bolgheri is the home of one of the worlds most expensive wines, the Sassicaia, made entirely on french grapes, but on Tuscan soil. Back in Viareggio we will have our late vegan dinner, maybe followed by a vegan ice cream on the Passeggiata. You will spend the night in a century-old seaside villa, full of marble mosaics, high ceilings and palm trees in the garden. The morning awaits you with freshly brewed coffee and a vegan buffet.

On our second day we will start off with a pasta making workshop where Sabrina, our local "mamma" is your teacher. Later in the day Kristof takes over in order to complete the pasta with mouth-watering sauces, entrées and a delicious vegan dessert. Dinner will be served in our sea-view dining room.

• Pasta-making session
• Excursion and wine tasting in beautiful Bolgheri
• Visit to a olive oil farm (incl. vegan lunch and oil tasting)
• Vegan buffet breakfast in the morning
• Prosecco / Aperol spritz / wine / soda water / tea / coffee
• 1 night in a two-bed room in our seaside villa
• All transfers to/from Pisa airport or train station and on site

Menú

• Prepare more than 10 dishes mainly from the Tuscan kitchen; some dishes may come from other parts of the Mediterranean, like Cyprus, Lebanon, Israel or Turkey, all forming this beautiful mix of sun-drenched vegetables combined with heavenly spices.
• Half day pasta making workshop, where Sabrina, our home cooking pasta expert from Tuscany, will teach you how to make egg-less pasta taste like heaven!

The menu depends on our market raids, but everything we eat will definitely be vegan, healthy and very very delicious!

Programma

Day 1

• 09:00 am: meet up at the villa in Viareggio for our day in Bolgheri
• 11:00 am: arrive at an olive farm in Bolgheri for our oil school/tasting
• 12:45 pm: vegan lunch with Tuscan veggies and an exciting salad, stroll in medieval Bolgheri, coffee, ice cream
• 3:30 pm: wine tasting at one of the Bolgheri wineries
• 7:30 pm: vegan dinner in the villa

Day 2

• 10:00 am: After our opulent buffet breakfast, we start our pasta workshop. Sabrina, a real master of pasta making, will teach us how to make eggless pasta of different shapes, which we all prepare together on long tables in our lovely dining room. Rest assured there will be flour everywhere! 
• 12:00 pm: After we have finished and put our pasta out in the air to let it dry, we will have a light lunch of salads and antipasti. 
• 1:00 pm: After lunch, we have a siesta on the beach or in our garden.
• 3:00 pm: In the late afternoon, when the sun has lost most of its heat, we gather in the kitchen again, where Kristof will show us some mouth-watering pasta sauce recipes which we will pair with the pasta we made in the morning session. Our menu will include vegan starters and a fabulous dessert as well.
• 6:00 pm: The course ends with the handout of your certificates of participation!
