In this workshop, you'll learn to craft traditional Japanese umami soup. First, we'll create Tsukudani, a home-cooked dish using vegetables steeped in flavorful soup stock. Next, we'll prepare seasoned eggs, a vital component of ramen (please prepare this a day in advance, but I'll guide you through it). Then, we'll slice and season the ramen ingredients, stir-frying them to perfection. While we'll be using store-bought noodles, a common choice in Japanese households, the focus remains on authentic flavors and techniques.
Additionally, we'll make Gyoza, delicate dumplings filled with vegetables and meat wrapped in a flour casing. The filling features a blend of cabbage, green onions, and pork seasoned with garlic and ginger. For vegetarian options, we offer Gyoza crafted solely from vegetables. I'll also share my original sauce recipe, ensuring you can recreate these dishes confidently at home.
We exclusively use dashi stock to enhance traditional Japanese flavors without any animal products. Our vegetarian options feature ingredients sourced solely from vegetables.
