Ozeki Cooking School welcomes students from around the world to Seki, Gifu -a historic town renown for Samurai swords- and Ukai, cormorant fishing. Throughout the four seasons, cooking with Chef Shuji can take you into the luscious bamboo forest, over to the serene rice paddy, to the rushing Nagara river, and back to the 103 year-old Yamakyu Restaurant, where all the culinary delight takes place.
Master Chef Shuji's approachable, generous demeanor coupled with thorough hands-on instruction and easy-to-follow translated recipes will equip you with the skills needed to recreate the wholesome and delicious Japanese dishes in your own home. Shuji will gladly share his vast cultural and culinary knowledge, answering any questions you may have throughout the workshop and dinner.
A typical washoku course consists of Ichiju-Sansai一汁三菜
The term Washoku encompasses a wide array of dishes, from miso soup to regional specialties to home-cooked staples. In Shuji's Washoku-Japanese home cooking workshop, he will introduce you to his repertoire of favorites in four different seasons.
Chef Shuji offers pick up service and will take you to accommodation after the class. If requested prior to arrival, Shuji can arrange a visit to a local fish market and a kitchen knife shop. The town of Seki is renowned for its export quality kitchen knives and cooking utensils.
