About

In this workshop, you'll learn to craft traditional Japanese umami soup. First, we'll create Tsukudani, a home-cooked dish using vegetables steeped in flavorful soup stock. Next, we'll prepare seasoned eggs, a vital component of ramen (please prepare this a day in advance, but I'll guide you through it).

Then, we'll slice and season the ramen ingredients, stir-frying them to perfection. While we'll be using store-bought noodles, a common choice in Japanese households, the focus remains on authentic flavors and techniques. Our vegetarian options feature ingredients sourced solely from vegetables.

  • The Chayagaasaka station on the Meijo Line is a 17-minute subway ride from Nagoya Castle Station with no transfers. I will meet you by car at Chayagaasaka station, the nearest stop.
  • Upon exiting the ticket gate, take Exit 1 on your right and proceed to ground level. You will see a FamilyMart on your left-hand side. We will be waiting for you in the parking area nearby.
